What’s cooking in Vietnam

THE popularity of, first Chinese, then Thai food spawned lucrative tourism industry offshoots in their home countries.

Swarms of tourists, convinced they could produce comparable (or even better) dishes by taking crash courses in cooking in situ, queued up to shell out collective big bucks for the experience.

Given the immense, and continuing popularity of Vietnamese food the phenomenon continues.

Latest to join in is the utterly delightful and very upmarket in everything but price Victoria Phan Thiet Beach Resort and Spa, located about 200km north of capital Hanoi.

Not only are they offering guests the secrets of preparation and cooking, they take them on ingredient-buying safaris in the same fresh food markets local chefs frequent.

For about $100, the culinary tour starts in nearby Phan Thiet fishing village with breakfast in a local restaurant. This is followed by a visit to a fish sauce factory and, as most know, this is a Vietnamese specialty, arguably more flavoursome than any Chinese or Thai counterpart.

With the ingredients collected, Victoria Phan Thiet's piece de resistance is just ahead - your two hours cooking class led by the master himself, world-travelled Frenchman Benoit Letellier and his Vietnamese sous-chef.

Students are briefed on Vietnamese herbs before taking on creating classics like Vietnamese fresh Spring rolls and fish in a clay pot.

Then there's a traditional one-hour massage to help you wind-down.
